- 2 tablespoons Olive Oil
- 1 large Onion, Sliced
- 4 cloves Garlic, Minced
- 1 cup Chicken Broth
- 1/3 cup Soy Sauce
- 1/4 cup Honey
- 1 tablespoon Dijon Mustard
- 1 teaspoon Smoked Paprika
- 1 teaspoon Dried Thyme
- 1/2 teaspoon Salt
- 1/2 teaspoon Black Pepper
- 2 tablespoons Cornstarch
- 2 tablespoons Water
- Fresh Parsley
Instructions
- Pat chicken breasts dry and season lightly with salt and pepper. Slice the onion and mince the garlic.
- Heat olive oil in a skillet over medium-high heat. Sear each breast 1–2 minutes per side until golden brown but not cooked through.
- In a bowl, whisk together chicken broth, soy sauce, honey, Dijon, smoked paprika, thyme, minced garlic, and sliced onion.
- Place seared chicken breasts in the slow cooker and pour the sauce over them. Cover and set to low for 4–6 hours or high for 2–3 hours until chicken reaches 165°F.
- Remove chicken and make a slurry with cornstarch and water. Stir it into the crockpot liquid, turn to high, and cook uncovered for 10–15 minutes until sauce thickens.
- Return chicken to the thickened sauce to coat, sprinkle fresh parsley, and serve warm.
Notes
For best results, rest chicken for 5 minutes after cooking for even juiciness. Serve with rice or tortillas.
