- 2 cups all-purpose flour
- 1/3 cup cornstarch
- 1 1/2 cups sugar
- 4 teaspoons baking powder
- 1/2 teaspoon salt
- 5 eggs
- 1/2 cup vegetable oil
- 1/2 cup milk

- 1/2 cup dark rum
- 2 teaspoons vanilla extract
- 1/4 teaspoon rum flavoring
- 1/4 cup dry bread crumbs (for dusting the baking pan)
- 1/2 cup unsalted butter
- 1/4 cup water
- 1/4 – 1/2 cup sugar
- 1/4 – 1/2 cup dark rum
- 1/2 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C). Grease a bundt pan and dust with dry bread crumbs.
- In a bowl, combine flour, cornstarch, sugar, baking powder, and salt.
- In another bowl, whisk together eggs, vegetable oil, milk, lemon juice, dark rum, vanilla extract, and rum flavoring. Mix half into the dry ingredients until smooth, then add the remaining liquid and mix again.
- Pour the batter into the prepared bundt pan, smoothing the top, and bake for 20 minutes. Rotate and lower temperature to 300°F (150°C) for another 20 minutes or until done.
- For the rum butter sauce, combine butter, water, sugar, dark rum, and vanilla in a saucepan and cook until the sugar dissolves.
- Poke holes in the cake and drizzle half of the sauce over it. Let rest for 10 minutes, then invert onto a plate and pour remaining sauce on top.
Notes
For a gluten-free option, use a gluten-free flour blend. Add additional flavors or spices like cinnamon for variations.
