- 6 skin-on chicken thighs (bone-in)
- 3 tablespoons butter
- 1 tablespoon baking powder
- 2 teaspoons garlic powder
- 2 teaspoons paprika
- 2 teaspoons onion powder
- 1½ teaspoons kosher salt
- ¾ teaspoon black pepper
- ½ teaspoon dried oregano
- ¼ teaspoon dried thyme
Instructions
- Preheat your oven to 415°F.
- Cover a baking dish with aluminum foil and lightly oil it.
- Combine baking powder, garlic powder, onion powder, salt, pepper, paprika, oregano, and thyme.
- Prepare the chicken by gently pulling back the skin to create a pocket.
- Arrange the chicken thighs upside-down on the pan and sprinkle with the seasoning mixture.
- Turn the chicken thighs over and season the tops generously.
- Place pieces of butter around the chicken thighs.
- Bake for 40 minutes, checking the internal temperature after 35 minutes.
- Let the chicken rest for 5 to 10 minutes before serving.
Notes
For the crispiest skin, pat the chicken skin dry before seasoning. Seasoning the thighs and refrigerating uncovered for an hour will enhance flavor.
