Description

These Roasted Chicken Thighs are crisp, tender, and flavorful, perfect for a comforting meal any night of the week.


Ingredients

  • 6 skin-on chicken thighs (bone-in)
  • 3 tablespoons butter
  • 1 tablespoon baking powder
  • 2 teaspoons garlic powder
  • 2 teaspoons paprika
  • 2 teaspoons onion powder
  • 1½ teaspoons kosher salt
  • ¾ teaspoon black pepper
  • ½ teaspoon dried oregano
  • ¼ teaspoon dried thyme

Instructions

  1. Preheat your oven to 415°F.
  2. Cover a baking dish with aluminum foil and lightly oil it.
  3. Combine baking powder, garlic powder, onion powder, salt, pepper, paprika, oregano, and thyme.
  4. Prepare the chicken by gently pulling back the skin to create a pocket.
  5. Arrange the chicken thighs upside-down on the pan and sprinkle with the seasoning mixture.
  6. Turn the chicken thighs over and season the tops generously.
  7. Place pieces of butter around the chicken thighs.
  8. Bake for 40 minutes, checking the internal temperature after 35 minutes.
  9. Let the chicken rest for 5 to 10 minutes before serving.

Notes

For the crispiest skin, pat the chicken skin dry before seasoning. Seasoning the thighs and refrigerating uncovered for an hour will enhance flavor.
