- 1/2 Cup Unsweetened natural cocoa powder (45 g)
- 1 1/2 Cups Heavy whipping cream (360 ml)
- 11 TBSP Unsalted butter, cut into 1″ pieces (160 g)
- 3/4 Cup Unsweetened chocolate, chopped (120 g)
- 1/2 Cup Light brown sugar (100 g)
- 1 Cup Granulated sugar (200 g)
- 4 Large eggs, at room temperature
- 1 Cup All-purpose flour (120 g)
- 1 teaspoon Baking powder
- 1/2 teaspoon Salt
- 1 Cup Semi-sweet chopped chocolate (170 g)
- 2 Tablespoon Vegetable oil (30 ml)
Instructions
- Preheat your oven to 350°F (175°C). Grease and line a 9×13 inch baking pan with parchment paper.
- In a medium saucepan over low heat, melt the chopped chocolate and unsalted butter, stirring frequently until smooth. Remove from heat and let cool slightly.
- Add both the granulated sugar and light brown sugar to the melted chocolate mixture. Stir until fully combined.
- Incorporate the eggs, one at a time, mixing well after each addition. The mixture should be glossy and thick.
- In a separate bowl, whisk together the cocoa powder, all-purpose flour, baking powder, and salt.
- Gradually add the dry mixture to the chocolate mixture, stirring gently until just combined. Be careful not to overmix.
- Gently fold in the semi-sweet chopped chocolate, allowing those delicious chunks to scatter throughout.
- Pour the batter into the prepared pan and spread it evenly. Bake for about 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
- Allow the cake to cool in the pan for 10 minutes before slicing into squares. Serve warm or at room temperature.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend. For a vegan option, use flax eggs and vegan butter.
