Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup tomato sauce
  • 1/2 cup green olives, sliced
  • 1/2 cup raisins
  • 1/2 cup diced potatoes
  • 1/2 cup carrots, chopped
  • 1/2 cup peas
  • 1/4 cup capers
  • 1/4 cup chicken broth
  • 1/4 cup vegetable oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons chopped cilantro
  • 1 tablespoon vinegar
  • 1/2 teaspoon sugar

Instructions

  1. Heat the vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until softened, approximately 5 minutes.
  3. Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
  4. Add the ground beef, breaking it up with a spatula. Cook until browned, about 7-8 minutes.
  5. Drain excess fat, then return the skillet to heat.
  6. Mix in the tomato sauce, olives, raisins, potatoes, carrots, peas, capers, chicken broth, cumin, paprika, oregano, chili powder, salt, pepper, and sugar.
  7. Stir thoroughly and bring to a gentle simmer.
  8. Cover and reduce heat to low, cooking for 20-25 minutes or until vegetables are tender.
  9. Stir in vinegar and chopped cilantro just before serving. Adjust seasoning if necessary.
  10. Serve warm, with rice or tortillas.

Notes

For a unique twist, substitute the ground beef with lentils or mashed chickpeas for a vegan version.
