- 1 medium onion, chopped

- 1/2 cup raisins
- 1/2 cup diced potatoes

- 1/2 cup peas
- 1/4 cup capers
- 1/4 cup chicken broth
- 1/4 cup vegetable oil
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon oregano
- 1/2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons chopped cilantro
- 1 tablespoon vinegar
- 1/2 teaspoon sugar
Instructions
- Heat the vegetable oil in a large skillet over medium heat.
- Add the chopped onion and sauté until softened, approximately 5 minutes.
- Stir in the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the ground beef, breaking it up with a spatula. Cook until browned, about 7-8 minutes.
- Drain excess fat, then return the skillet to heat.
- Mix in the tomato sauce, olives, raisins, potatoes, carrots, peas, capers, chicken broth, cumin, paprika, oregano, chili powder, salt, pepper, and sugar.
- Stir thoroughly and bring to a gentle simmer.
- Cover and reduce heat to low, cooking for 20-25 minutes or until vegetables are tender.
- Stir in vinegar and chopped cilantro just before serving. Adjust seasoning if necessary.
- Serve warm, with rice or tortillas.
Notes
For a unique twist, substitute the ground beef with lentils or mashed chickpeas for a vegan version.
