- 2 1/2–3 Yukon Gold or Russet potatoes, cut into cubes
- 2 tablespoons ghee or vegetable oil
- 1 medium onion, finely diced
- 4 cloves garlic, minced
- 1-inch piece ginger, peeled and grated
- 1–2 green chili peppers, sliced (optional)
- 2 teaspoons garam masala
- 1 1/2 teaspoons ground cumin
- 1 teaspoon mustard seeds
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1/2 teaspoon Kashmiri red chili powder
- 2–3 medium tomatoes, diced
- 1/2 cup vegetable broth
- 1 (14-ounce) can coconut milk
- 1/2 cup frozen peas
- 1 (15-ounce) can chickpeas, drained and rinsed
- Salt and pepper, to taste
- Chopped fresh cilantro, for garnish
Instructions
- Prepare the Potatoes: Scrub clean, peel, and cut the potatoes into 1-inch cubes. Set aside.
- Sauté the Aromatics: In a large pot, warm the ghee over medium heat. Add the onion and cook for 3-5 minutes, stirring often, until soft and translucent.
- Add Spices: Stir in the garlic, ginger, and optional green peppers along with garam masala, cumin, mustard seeds, turmeric, coriander, and chili powder. Cook while stirring for 1-2 minutes until fragrant.
- Incorporate Tomatoes and Potatoes: Add diced tomatoes and potato cubes. Mix well, then pour in vegetable broth. Bring to a gentle boil.
- Simmer Together: Reduce heat to low, cover, and let simmer for 15-20 minutes, stirring occasionally, until potatoes are just tender.
- Finish the Curry: Stir in coconut milk, frozen peas, and chickpeas. Simmer uncovered for 5-10 more minutes, until the sauce thickens.
- Season and Serve: Taste and season with salt and pepper. Serve hot, garnished with fresh cilantro with rice or naan.
