Ingredients

  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 1/2 cups pizza sauce
  • 1/2 tsp Italian seasoning
  • 1/4 tsp crushed red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 68 medium flour tortillas
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced green bell pepper or mushrooms (optional)
  • Cooking spray or oil, for greasing the baking dish
  • Chopped fresh basil or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, cook the ground beef and diced onion until browned, ensuring to drain excess fat afterward.
  3. Add the minced garlic to the skillet and cook until fragrant.
  4. Stir in the pizza sauce, Italian seasoning, crushed red pepper flakes, salt, and pepper. Allow it to simmer for a few minutes, then remove from heat.
  5. Spoon a few tablespoons of the beef mixture into each tortilla, sprinkle with mozzarella and cheddar cheese, then roll up tightly.
  6. Place the rolled tortillas seam-side down in the baking dish.
  7. Pour remaining beef and sauce mixture over the top and finish with leftover cheese. Add black olives or peppers if using.
  8. Bake for 20–25 minutes or until the cheese is melted and bubbly.
  9. Garnish with chopped basil or parsley, serve hot, and enjoy!
