- 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions
- Sear the beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef chunks in batches, browning them on all sides for about 5-7 minutes.
- Set in the slow cooker: Transfer the browned beef to the crockpot. Layer the diced potatoes, sliced carrots, chopped celery, onion, and minced garlic on top.
- Prepare the broth mixture: In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix until smooth.
- Combine and stir: Pour the broth mixture over the beef and vegetables in the crockpot. Gently stir to combine.
- Cook to perfection: Cover and set the crockpot to low for 8-10 hours or on high for 4-6 hours until the beef is tender and the flavors meld beautifully.
- Thicken if desired: If you prefer a thicker stew, mix cornstarch with cold water in a small bowl. Stir it into the stew 30 minutes before serving.
- Garnish and serve: Top with freshly chopped parsley and serve hot, inviting everyone to dig into this cozy delight.
