Description

A heartwarming beef stew that offers comfort and nostalgia, perfect for cozy gatherings.

Ingredients

Scale
  • 2 lbs beef stew meat, cut into chunks
  • 4 medium Yukon gold potatoes, peeled and diced
  • 4 carrots, peeled and sliced
  • 3 celery stalks, chopped
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 3 cups beef broth
  • 1/4 cup tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for browning beef)
  • 2 tbsp cornstarch + 2 tbsp cold water (optional, for thickening)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Sear the beef: Heat olive oil in a large skillet over medium-high heat. Sear the beef chunks in batches, browning them on all sides for about 5-7 minutes.
  2. Set in the slow cooker: Transfer the browned beef to the crockpot. Layer the diced potatoes, sliced carrots, chopped celery, onion, and minced garlic on top.
  3. Prepare the broth mixture: In a separate bowl, combine the beef broth, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper. Mix until smooth.
  4. Combine and stir: Pour the broth mixture over the beef and vegetables in the crockpot. Gently stir to combine.
  5. Cook to perfection: Cover and set the crockpot to low for 8-10 hours or on high for 4-6 hours until the beef is tender and the flavors meld beautifully.
  6. Thicken if desired: If you prefer a thicker stew, mix cornstarch with cold water in a small bowl. Stir it into the stew 30 minutes before serving.
  7. Garnish and serve: Top with freshly chopped parsley and serve hot, inviting everyone to dig into this cozy delight.

Notes

Browning beef adds depth to flavor; adjust seasoning before serving to enhance flavors.
