- 1 tbsp cornstarch
- 2 tbsp water
- 1 tsp lemon juice
- 1 cup powdered sugar
- 1–2 tbsp milk

Instructions
- In a medium saucepan over medium heat, combine the diced peaches, brown sugar, and cinnamon. Stir occasionally, allowing the mixture to bubble and the flavors to blend beautifully together.
- In a small bowl, mix the cornstarch and water to create a slurry. Add this to the peach mixture after it begins bubbling and cook for an additional 2-3 minutes until thickened. Stir in the lemon juice, then remove the pan from heat and let it cool.
- In a separate bowl, use a mixer to beat the softened cream cheese, powdered sugar, and vanilla extract until it becomes smooth and creamy. Transfer this mixture into a piping bag or a zip-top bag with one corner snipped off for easy filling.
- Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
- Gently separate the biscuit dough, flattening each piece slightly with your hands. Fry these in the hot oil for 1-2 minutes per side until golden brown, then remove and drain them on paper towels.
- Once the donuts cool a bit, create a small slit in the side of each donut. Fill them generously with the creamy cheesecake mixture using your piping bag.
- Spoon the cooled peach cobbler topping generously on top of each filled donut.
- If desired, whisk together powdered sugar, milk, and vanilla extract in a small bowl to create a glaze. Drizzle this glaze over the filled donuts for an extra sweet touch.
