Instructions

  1. In a medium saucepan over medium heat, combine the diced peaches, brown sugar, and cinnamon. Stir occasionally, allowing the mixture to bubble and the flavors to blend beautifully together.
  2. In a small bowl, mix the cornstarch and water to create a slurry. Add this to the peach mixture after it begins bubbling and cook for an additional 2-3 minutes until thickened. Stir in the lemon juice, then remove the pan from heat and let it cool.
  3. In a separate bowl, use a mixer to beat the softened cream cheese, powdered sugar, and vanilla extract until it becomes smooth and creamy. Transfer this mixture into a piping bag or a zip-top bag with one corner snipped off for easy filling.
  4. Heat vegetable oil in a deep skillet or pot to 350°F (175°C).
