  • Pinch of salt (for filling)

Instructions

  1. Preheat the Oven: Set the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Cookie Dough: In a large mixing bowl, beat the softened butter and sugar until light and fluffy, about 2 minutes. Add the egg and vanilla extract, mixing until fully combined.
  3. Combine the Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until the dough becomes thick and soft. Add the milk and mix until fully incorporated.
  4. Color the Dough: Divide the dough into five portions. Use gel food coloring to dye each portion a different pastel color, kneading in the color until evenly distributed.
  5. Shape and Bake: Scoop about 1 tablespoon of dough for each cookie and roll it into a smooth ball. Place them on the prepared baking sheet, spacing about 2 inches apart. Bake for 8-10 minutes, until the edges are set and the tops appear slightly cracked. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  6. Make the Vanilla Filling: In a mixing bowl, beat the softened butter until smooth. Gradually add the powdered sugar, followed by the heavy cream (or milk), vanilla extract, and pinch of salt. Continue beating until the mixture is fluffy and spreadable.
  7. Assemble the Cookie Sandwiches: Once the cookies are completely cool, pair them by size. Spread a generous amount of filling on the flat side of one cookie, then place another cookie on top, gently pressing down to evenly distribute the filling.
  8. Set Before Serving: Allow the cookie sandwiches to sit for about 10 minutes to let the filling firm up slightly.
