Description

Sweet, tender carrots roasted with a buttery garlic glaze and finished with golden parmesan cheese. A quick, flavorful side dish for any meal.


Ingredients

2 pounds carrots, washed, scrubbed, diagonally cut into about 3-inch pieces

4 tablespoons butter

4 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon salt, or to taste

1/4 teaspoon fresh ground black pepper

1/3 cup grated parmesan cheese

1/4 cup chopped fresh parsley


Instructions

1. Preheat oven to 425°F.

2. Grease a rimmed baking sheet with cooking spray or line with foil.

3. Place carrots in a large mixing bowl.

4. Melt butter in the microwave. Stir in minced garlic, Italian seasoning, salt, and pepper.

5. Pour butter mixture over carrots and toss to coat.

6. Add grated parmesan cheese and toss again.

7. Transfer carrots to baking sheet in a single layer.

8. Bake 20–25 minutes until tender, stirring halfway through.

9. Remove from oven, adjust seasoning if needed, sprinkle with parsley, and serve.
