- 1 ½ lb chicken breast (about 3–4 pieces, approximately 1 inch thick)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/3 cup grated Parmesan cheese
- 1/3 cup breadcrumbs (Italian or plain; if using plain, add 1 tsp Italian seasoning)
- ½ tsp cracked pepper
- ½ – ¾ tsp sea salt
- 2 lb red potatoes, cut into bite-sized pieces
- 1 lb fresh green beans, ends trimmed
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Line a baking sheet with parchment paper for easy cleanup.
- In a medium bowl, mix together the cut potatoes, minced garlic, olive oil, Parmesan, and seasonings until they’re well-coated.
- Spread the seasoned potatoes on one side of the sheet pan and roast for 10-15 minutes until they start to soften.
- In another bowl, combine the chicken with olive oil, minced garlic, Parmesan, breadcrumbs, cracked pepper, and salt.
- Place the chicken alongside the potatoes on the same sheet pan.
- Toss the green beans with olive oil, minced garlic, Parmesan, and seasoning.
- Scatter the green beans over the remaining space on the sheet pan.
- Bake everything for an additional 25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and crispy.
- For a delightful crunch, broil on high for an additional 4-5 minutes.
- Allow it to cool slightly before serving, and enjoy.
Notes
Opt for organic, free-range chicken for the best flavor. Feel free to swap green beans for broccoli or asparagus based on preference.
