Ingredients

  • 4 small–medium chicken breasts
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • ½ cup grated Parmesan cheese
  • ½ cup panko breadcrumbs
  • 34 cloves garlic, minced
  • 1 cup light or heavy cream
  • 1 tablespoon Italian seasoning or oregano

Instructions

  1. Preheat a large skillet over medium heat. Season the chicken breasts generously with salt and pepper.
  2. In a mixing bowl, combine the grated Parmesan cheese and panko breadcrumbs.
  3. Add olive oil to the skillet and sear the chicken breasts for 5-7 minutes per side until golden brown and cooked through (165°F/75°C).
  4. Toss minced garlic into the skillet and sauté for about 1 minute. Pour in the cream and add Italian seasoning, simmering for a few minutes.
  5. Return the chicken to the skillet, allowing it to soak in the creamy sauce for another 2-3 minutes.

Notes

For extra flavor, consider adding a splash of lemon juice or white wine to the sauce. Fresh herbs make a lovely garnish.
