A simple yet flavorful roasted chicken infused with fresh herbs, garlic, and lemon. Perfect for a cozy family dinner.

- 1 whole chicken
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 tablespoons fresh rosemary
- 2 tablespoons fresh thyme
- 4 cloves garlic
- 1 teaspoon lemon zest
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 2 tablespoons butter
Instructions
- Preheat the oven to 425°F (220°C).
- Pat the chicken dry with paper towels and tuck the wing tips behind the back.
- Mix olive oil, salt, black pepper, minced garlic, lemon zest, paprika, and onion powder in a small bowl.
- Massage half the mixture under the skin and the rest over the skin.
- Loosen the skin over the breasts and place small pats of butter under the skin.
- Sprinkle rosemary and thyme under and over the skin.
- Tie the legs with kitchen twine or tuck them under the bird.
- Roast for 15 minutes at 425°F, then reduce to 375°F (190°C) and continue roasting until the thickest part of the thigh reads 165°F (74°C).
- Let the chicken rest for 10–15 minutes before carving.
Notes
For a quicker cook, spatchcock the chicken. This recipe can be prepped up to 24 hours in advance.
