- 1 pound smoked sausage, sliced
- 1 cup rice
- 2 cups chicken broth
- 1 onion, chopped
- 1 bell pepper, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Optional: favorite veggies (e.g., peas, carrots, green beans)
Instructions
- In a large pot, heat a drizzle of oil over medium heat and sauté the onion and bell pepper until they turn soft and fragrant, about 3-5 minutes.
- Stir in the minced garlic and add the sliced smoked sausage. Cook until the sausage is nicely browned and aromatic, about 5 more minutes.
- Add the rice to the pot, along with the paprika, Italian seasoning, salt, and pepper. Stir well to combine.
- Pour in the chicken broth and bring to a boil, allowing flavors to mingle.
- Once boiling, reduce heat to low, cover, and simmer for about 20 minutes until rice is tender and liquid is absorbed.
- In the last 5 minutes, fold in any additional veggies you desire.
- Fluff the rice with a fork and serve warm.
