Ingredients
- 1 lb ground beef or Italian sausage
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 bay leaf
- 8 oz lasagna noodles, broken into pieces
- 2 cups ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish (optional)
Instructions
1. In a large pot over medium heat, cook the ground beef or sausage until browned. Break it up as it cooks.
2. Add the chopped onion and cook for 3–4 minutes until soft. Stir in garlic and cook 1 minute more.
3. Pour in crushed tomatoes and broth. Stir well.
4. Add oregano, basil, bay leaf, salt, and pepper. Bring to a boil.
5. Add broken lasagna noodles and reduce heat. Simmer 10 minutes or until noodles are tender.
6. Stir in ricotta until creamy. Add half the mozzarella and Parmesan. Mix until melted.
7. Adjust salt and pepper to taste.
8. Remove bay leaf. Ladle into bowls and top with remaining cheeses and fresh basil.
Notes
Use oven-ready lasagna noodles to save time.
Add spinach or mushrooms for extra veggies.
Refrigerate leftovers for up to 3 days. Reheat with a splash of broth.
