A comforting bowl of creamy Cajun sausage pasta that combines the warmth of Southern cooking with the ease of a one-pot meal.

- 12 oz smoked sausage
- 8 oz farfalle pasta (bowtie)
- 1 tbsp olive oil
- 1/2 medium onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 2 cups low-sodium chicken broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- Cajun seasoning (to taste)
- Fresh parsley or green onions for garnish
Instructions
- In a large skillet or Dutch oven, heat olive oil over medium-high heat.
- Add the smoked sausage and brown for about 4-5 minutes. Remove it from the pot and set aside.
- In the same pot, sauté the diced onion for 2-3 minutes until soft, and then add the minced garlic. Cook for an additional 30 seconds until fragrant.
- Return the sausage to the pot, then add the farfalle pasta, diced tomatoes (including the juice), chicken broth, Cajun seasoning, salt, and pepper. Stir well to combine.
- Bring the mixture to a boil, then reduce the heat to a simmer. Cover and cook for 12-14 minutes, or until the pasta is tender and has absorbed the flavors.
- Stir in the heavy cream and shredded cheese until melted and smooth. Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley or sliced green onions for a pop of color.
Notes
For lighter options, use turkey or chicken sausage, and consider substituting heavy cream with half-and-half or a dairy-free alternative.
