Description

Ingredients

  • 1 lb chicken thighs
  • 1 cup rice
  • 1 cup picante sauce
  • 1 cup chicken broth
  • 1 cup shredded cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Season the chicken thighs generously with garlic powder, onion powder, salt, and pepper.
  2. In your Instant Pot, add the seasoned chicken thighs, and brown them on both sides.
  3. Pour in the rice, picante sauce, and chicken broth, mixing it all together.
  4. Close the Instant Pot lid securely and cook on high pressure for 10 minutes.
  5. Let the pressure release naturally for 5 minutes, then perform a quick release to vent any remaining steam.
  6. Open the lid and stir in the shredded cheese until melted.
  7. Serve hot, garnishing as desired.

Notes

For added crunch, consider adding frozen peas or chopped bell peppers during the last minutes of cooking.
