- 1 lb chicken thighs
- 1 cup rice
- 1 cup picante sauce
- 1 cup chicken broth
- 1 cup shredded cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
- Season the chicken thighs generously with garlic powder, onion powder, salt, and pepper.
- In your Instant Pot, add the seasoned chicken thighs, and brown them on both sides.
- Pour in the rice, picante sauce, and chicken broth, mixing it all together.
- Close the Instant Pot lid securely and cook on high pressure for 10 minutes.
- Let the pressure release naturally for 5 minutes, then perform a quick release to vent any remaining steam.
- Open the lid and stir in the shredded cheese until melted.
- Serve hot, garnishing as desired.
Notes
For added crunch, consider adding frozen peas or chopped bell peppers during the last minutes of cooking.
