Description

A delicious fusion of honey BBQ chicken and seasoned rice, prepared in one skillet for a cozy, family-friendly meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup long-grain white rice
  • 1 1/2 cups chicken broth
  • 1/2 cup honey BBQ sauce
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Chopped green onions for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Season chicken thighs with salt and pepper, then sear for 5-7 minutes on each side until golden brown and cooked through. Remove chicken and set aside.
  3. Add rice to the same skillet and toast for 1-2 minutes while stirring.
  4. Pour in chicken broth, honey BBQ sauce, garlic powder, onion powder, and smoked paprika. Stir well and bring to a boil.
  5. Reduce heat to low, return chicken to skillet, and layer frozen mixed vegetables on top. Cover and simmer for 20-25 minutes until rice absorbs all liquid.
  6. Let dish rest for 5 minutes, then fluff rice with a fork and garnish with chopped green onions.

Notes

For a vegan version, swap chicken for chickpeas and use vegetable broth.
