Description

Bright, colorful oven-roasted vegetables with Mediterranean flavors, perfect for busy weeknights.

Ingredients

Scale
  • 1 zucchini, sliced
  • 1 bell pepper, chopped
  • 1 red onion, sliced
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 teaspoons dried oregano
  • Salt and pepper to taste
  • Feta cheese for topping (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Combine the zucchini, bell pepper, red onion, and cherry tomatoes in a large bowl.
  3. Drizzle with olive oil and sprinkle with oregano, salt, and pepper.
  4. Toss to coat the vegetables evenly.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the oven for about 20-25 minutes, or until the vegetables are tender and slightly caramelized.
  7. Optional: Sprinkle with feta cheese before serving.

Notes

For even roasting, cut vegetables into uniform pieces and avoid overcrowding the pan. Let rest for 3-5 minutes before serving to enhance flavor.
