Description

This One Pan Balsamic Chicken is a flavorful and easy Italian-inspired dinner made with juicy chicken breasts, fresh basil, mozzarella, and a tangy honey-balsamic glaze. Everything cooks in one skillet for a simple, family-friendly meal with minimal cleanup.


Ingredients

  • 1/3 cup balsamic vinegar
  • 2 tablespoons honey
  • 2 tablespoons oil (avocado or olive oil)
  • 2 garlic cloves, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon Dijon mustard
  • 8 ounces grape tomatoes, halved
  • 8 ounces fresh mozzarella balls (ciliegine or pearls)
  • 2 tablespoons finely chopped fresh basil
  • 2 pounds boneless, skinless chicken breasts, pounded to even thickness
  • 2 tablespoons avocado oil or other high-heat oil
  • Kosher salt and black pepper, to taste

Instructions

1. In a bowl, whisk together balsamic vinegar, honey, oil, garlic, Italian seasoning, and Dijon mustard. Season with salt and pepper and set aside.

2. In another bowl, toss together the tomatoes, mozzarella, and basil with a pinch of salt and pepper. Set aside.

3. Preheat oven to 400°F.

4. Heat avocado oil in a large oven-safe skillet over medium-high heat. Season chicken with salt and pepper. Sear 1–2 minutes per side until lightly golden.

5. Pour the balsamic sauce mixture over the chicken and stir to deglaze the pan, scraping any brown bits from the bottom.

6. Remove from heat and spoon the tomato mozzarella mixture over the chicken.

7. Transfer skillet to oven and bake uncovered for 18–23 minutes, or until internal temperature reaches 165°F.

8. Let the chicken rest for 5 minutes before serving. Spoon extra sauce over the top before serving.

Notes

Pound the chicken evenly to ensure tender and juicy results.

For a thicker glaze, simmer the balsamic sauce for 2–3 minutes before baking.

Use fresh mozzarella for the best melt and flavor.

Store leftovers in the refrigerator for up to 3 days or freeze for up to 2 months.
