- 3 cups squash, sliced
- 1 onion, diced
- 2 tablespoons butter
- 3 eggs
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1 cup cheddar cheese, grated
- 1 cup Swiss cheese, grated
- 1/4 cup parmesan cheese, grated
- 1 teaspoon thyme
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 cup crushed Ritz crackers
Instructions
- Preheat the oven to 350°F (175°C).
- Melt butter in a skillet and sauté onions until translucent.
- Combine cooked squash, sautéed onions, eggs, sour cream, mayonnaise, cheddar, Swiss, thyme, salt, and pepper in a mixing bowl.
- Pour the mixture into a greased baking dish.
- Top with crushed Ritz crackers and sprinkle parmesan on top.
- Bake for 30-40 minutes until bubbly and golden brown.
- Allow to cool slightly before serving.
Notes
For extra crunch, mix a little melted butter into the crushed crackers before topping the casserole.
