- 1 cup heavy cream

Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
- Add vanilla extract to the sugar mixture and blend well until combined.
- In another bowl, combine flour, rolled oats, baking soda, cinnamon, and salt. Stir until evenly mixed.
- Gradually add the dry ingredients to the creamed mixture, stirring until fully combined. Your dough will be thick but manageable.
- Drop rounded amounts of dough onto ungreased baking sheets, spaced about 2 inches apart.
- Bake for 10-12 minutes or until the edges are golden brown and the centers look set.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- For the filling, whip the heavy cream in a large bowl until soft peaks form. Gradually add powdered sugar and vanilla while continuing to whip until stiff peaks form.
- Spread a layer of filling on the flat side of one cookie and top it with another to create a sandwich.
