Ingredients

  • 2 cups rolled oats

  • Filling:
  • 1 cup heavy cream
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and fluffy, about 2-3 minutes.
  3. Add vanilla extract to the sugar mixture and blend well until combined.
  4. In another bowl, combine flour, rolled oats, baking soda, cinnamon, and salt. Stir until evenly mixed.
  5. Gradually add the dry ingredients to the creamed mixture, stirring until fully combined. Your dough will be thick but manageable.
  6. Drop rounded amounts of dough onto ungreased baking sheets, spaced about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are golden brown and the centers look set.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  9. For the filling, whip the heavy cream in a large bowl until soft peaks form. Gradually add powdered sugar and vanilla while continuing to whip until stiff peaks form.
  10. Spread a layer of filling on the flat side of one cookie and top it with another to create a sandwich.
