- 1.5 cups raw walnuts
- 1.5 cups raw almonds
- 2 1/2 cups medjool dates, packed
- 1/2 cup cocoa powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 2 cups medjool dates, packed
- 2–4 tbsp water, as needed
- 1 tsp vanilla extract
- 1/8 tsp salt
- 1/2 cup crushed pecans
- 1/2 cup mini chocolate chips
Instructions
- In a food processor, combine walnuts, almonds, pitted medjool dates, cocoa powder, vanilla extract, and salt. Process until a sticky dough forms.
- Line a square baking dish with parchment paper. Press the brownie mixture firmly into the base using your hands.
- In the same food processor, blend pitted medjool dates, water, vanilla extract, and salt until smooth.
- Pour the caramel mixture over the brownie layer. Sprinkle crushed pecans on top and press them in.
- Add mini chocolate chips on top and lightly press them down.
- Place in the freezer for 1 hour to set, then slice and enjoy!
Notes
Use fresh walnuts and almonds for best results. You can experiment with different nuts or spices for added flavor.
