Ingredients

  • 1.5 cups raw walnuts
  • 1.5 cups raw almonds
  • 2 1/2 cups medjool dates, packed
  • 1/2 cup cocoa powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 cups medjool dates, packed
  • 24 tbsp water, as needed
  • 1 tsp vanilla extract
  • 1/8 tsp salt
  • 1/2 cup crushed pecans
  • 1/2 cup mini chocolate chips

Instructions

  1. In a food processor, combine walnuts, almonds, pitted medjool dates, cocoa powder, vanilla extract, and salt. Process until a sticky dough forms.
  2. Line a square baking dish with parchment paper. Press the brownie mixture firmly into the base using your hands.
  3. In the same food processor, blend pitted medjool dates, water, vanilla extract, and salt until smooth.
  4. Pour the caramel mixture over the brownie layer. Sprinkle crushed pecans on top and press them in.
  5. Add mini chocolate chips on top and lightly press them down.
  6. Place in the freezer for 1 hour to set, then slice and enjoy!

Notes

Use fresh walnuts and almonds for best results. You can experiment with different nuts or spices for added flavor.
