Delicious no-bake cheesecake bars featuring fresh strawberries and a buttery graham cracker crust.

- 1.5 cups Graham cracker crumbs
- 0.5 cups Unsalted butter, melted
- 0.25 cups Granulated sugar
- 16 oz Cream cheese, softened
- 0.5 cups Powdered sugar
- 1 cup Heavy cream, whipped
- 1 teaspoon Vanilla extract
- 2 cups Fresh strawberries, sliced
- 1 tablespoon Lemon juice
- 2 tablespoons Granulated sugar (for macerating)
Instructions
- Combine graham cracker crumbs, granulated sugar, and melted butter in a bowl to form a crust mixture.
- Press the mixture firmly into an 8×8-inch pan lined with parchment.
- Chill the crust in the refrigerator for at least 15 minutes.
- Toss sliced strawberries with lemon juice and granulated sugar and let sit for 10-15 minutes.
- Beat cream cheese with powdered sugar and vanilla extract until smooth.
- Whip heavy cream to stiff peaks and fold into the cream cheese mixture.
- Fold in half of the macerated strawberries and spread the filling over the chilled crust.
- Refrigerate for at least 2 hours until firm.
- Top with remaining strawberries and cut into bars before serving.
Notes
For best results, use room temperature cream cheese for a lump-free filling and chill equipment for fluffier whipped cream.
