Ingredients

- 1 cup lentils
- 2 sweet potatoes, diced
- 1 onion, chopped
- 2 carrots, chopped
- 2 cloves garlic, minced
- 1 teaspoon turmeric
- 4 cups vegetable broth
- 1 teaspoon cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh cilantro for garnish
Instructions
- In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until they become translucent, about 3-4 minutes.
- Stir in the chopped carrots, diced sweet potatoes, lentils, turmeric, cumin, salt, and pepper. Mix until every piece is coated with the fragrant spices.
- Pour in the vegetable broth and bring to a rolling boil.
- Reduce the heat and let it simmer uncovered until the lentils and sweet potatoes are tender, about 30 minutes. Stir occasionally.
- Serve hot, garnished with fresh cilantro.
Notes
Adjust consistency by adding extra broth or simmering to thicken. Taste as you go to modify seasonings.
