Description

Ingredients

  • 1 cup lentils
  • 2 sweet potatoes, diced
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh cilantro for garnish

Instructions

  1. In a pot, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until they become translucent, about 3-4 minutes.
  2. Stir in the chopped carrots, diced sweet potatoes, lentils, turmeric, cumin, salt, and pepper. Mix until every piece is coated with the fragrant spices.
  3. Pour in the vegetable broth and bring to a rolling boil.
  4. Reduce the heat and let it simmer uncovered until the lentils and sweet potatoes are tender, about 30 minutes. Stir occasionally.
  5. Serve hot, garnished with fresh cilantro.

Notes

Adjust consistency by adding extra broth or simmering to thicken. Taste as you go to modify seasonings.
