Description
Crispy, flavor-packed Mojo Potatoes that are perfect as a snack or a side dish.

- 4 medium-sized potatoes (washed)
- 4 cups water
- 1 tablespoon rock salt
- 1 cup yogurt (or buttermilk or sour cream)
- 1 packet chicken breading mix (about a cup)
- 1 teaspoon paprika powder (optional)
- 1–2 cups oil (for frying)
Instructions
- Pour the water into a large pot and bring it to a boil over medium heat.
- While waiting for the water to boil, cut the washed potatoes into 1/4 inch thick slices.
- Once the water reaches a rolling boil, add the rock salt and gently introduce the potato slices, cooking them for precisely 3 minutes.
- Carefully transfer the potatoes to a colander to drain the water and allow the slices to cool slightly.
- In a mixing bowl, toss the warm potato slices with yogurt until they’re fully coated.
- In a large frying pan, heat 1-2 cups of oil over medium heat until it shimmers.
- On a plate, combine the chicken breading mix with the optional paprika powder.
- Coat a potato slice in the breading mix and drop it into the hot oil.
- Fry the potatoes for 2-3 minutes on each side, or until golden brown.
- Remove the crispy mojos and transfer them to a plate lined with paper towels.
- Serve Mojo Potatoes warm with your favorite dipping sauce.
Notes
For the best crispy texture, serve immediately after frying.
