- 1 packet taco seasoning
- 1 can Rotel tomatoes (diced tomatoes with green chilies)
- 2 cups biscuit mix
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or a blend)
- 1/2 cup water
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add taco seasoning and water to the skillet; stir well and let it simmer.
- In a greased casserole dish, spread half of the biscuit mix evenly to form a crust.
- Layer the seasoned beef on top of the biscuit mix.
- Pour the diced Rotel tomatoes over the beef.
- In a bowl, combine sour cream with half of the shredded cheese, then spread this mixture over the meat and tomatoes.
- Top with the remaining biscuit mix and sprinkle the rest of the cheese on top.
- Bake for 25-30 minutes, until the top is golden brown.
