Ingredients

  • 1 packet taco seasoning
  • 1 can Rotel tomatoes (diced tomatoes with green chilies)
  • 2 cups biscuit mix
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or a blend)
  • 1/2 cup water

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add taco seasoning and water to the skillet; stir well and let it simmer.
  4. In a greased casserole dish, spread half of the biscuit mix evenly to form a crust.
  5. Layer the seasoned beef on top of the biscuit mix.
  6. Pour the diced Rotel tomatoes over the beef.
  7. In a bowl, combine sour cream with half of the shredded cheese, then spread this mixture over the meat and tomatoes.
  8. Top with the remaining biscuit mix and sprinkle the rest of the cheese on top.
  9. Bake for 25-30 minutes, until the top is golden brown.
