  2. In a saucepan over medium heat, pour in 2 tablespoons of oil and warm it up.
  3. Add the whole cumin seeds and curry leaves, stirring for about 30 seconds until fragrant.
  4. Add the finely chopped onion and sauté until soft and translucent (about 4-5 minutes).

  6. Add the chopped tomatoes and cook until they soften and meld with the spices.
  7. Incorporate the washed lentils, frying for around 2 minutes.
  8. Pour in 4 cups of hot water, stir well, cover, and cook for about 15 minutes or until tender.
  9. Whisk the lentils with a fork for a creamy texture.
  10. Fold in chopped coriander leaves and mix evenly.
  11. For the tadka, heat another pan with 2 tablespoons of oil, sauté the garlic until golden, then add cumin seeds, dried chilies, and curry leaf.
  12. Add the red chili powder and pour the tadka over the cooked dal. Stir and serve!

Notes

Store leftovers in an airtight container. Reheat gently, adding a splash of water if needed.
