Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Parmesan cheese, for serving
  • Fresh basil, for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat. Season chicken breasts with garlic powder, onion powder, salt, and pepper. Cook for 5-7 minutes on each side until golden brown and cooked through. Remove from skillet and set aside.
  2. In the same skillet, pour in chicken broth and heavy cream, stirring to combine. Add chopped sun-dried tomatoes, fresh spinach, and Italian seasoning. Simmer for 3-5 minutes until warm and spinach wilts.
  3. Return the seared chicken to the skillet and simmer in the creamy sauce for an additional 2-3 minutes to meld flavors.
  4. Plate chicken over pasta or rice, drizzle with sauce, and sprinkle with Parmesan cheese and fresh basil before serving.

Notes

For a lighter version, substitute heavy cream with half-and-half. Experiment with different cheeses for varied flavor profiles.
