- 1 lb (450g) boneless, skinless chicken breasts or thighs
- 12 oz (340g) penne pasta (or gluten-free alternative)
- 2 tbsp olive oil
- Salt and pepper (to taste)
- 1 cup (150g) sun-dried tomatoes, chopped
- 3 garlic cloves, minced
- 1 cup (240ml) chicken broth
- 1 cup (240ml) heavy cream
- 1/2 cup (50g) grated Parmesan cheese
- 1 tsp Italian seasoning
- 1/2 tsp red pepper flakes (optional)
- Fresh basil or parsley (for garnish)
Instructions
- Boil a large pot of salted water and cook the penne according to the package instructions until al dente. Drain and set aside.
- Season the chicken with salt, pepper, and Italian seasoning. Heat olive oil in a large skillet over medium heat and sauté the chicken until browned and cooked through, about 6–7 minutes per side. Remove from skillet and let rest.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Pour in the chicken broth, scraping the bottom of the pan. Stir in heavy cream and sun-dried tomatoes, letting it simmer until slightly thickened.
- Slice the chicken and return it to the skillet along with cooked pasta. Add Parmesan cheese, fold gently, and let it absorb the creamy goodness for 2–3 minutes.
Notes
Taste the sauce before serving and adjust seasoning as needed. For extra flavor, consider adding a splash of white wine after sautéing the garlic.
