- 2 chicken breasts
- 8 oz penne pasta
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes
- 3 cloves garlic, minced
- 1 cup spinach
- 1/2 cup Parmesan cheese, grated
- Salt and pepper to taste
- Olive oil
Instructions
- Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
- In a large skillet, heat a drizzle of olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest.
- In the same skillet, add minced garlic and sun-dried tomatoes, sautéing for 1-2 minutes until fragrant and golden.
- Pour in the chicken broth and heavy cream. Stir to combine and simmer for 2-3 minutes to allow the flavors to meld.
- Stir in the fresh spinach and grated Parmesan cheese until the cheese melts and the spinach wilts into the sauce.
- Slice the rested chicken and return it to the skillet, adding the drained pasta. Toss to coat everything evenly in the creamy sauce.
- Serve hot, garnished with additional Parmesan and fresh basil if desired.
Notes
For a thicker sauce, let it simmer longer or add a cornstarch mixture. Don’t forget to taste and adjust seasoning.
