Description

Ingredients

  • 2 chicken breasts
  • 8 oz penne pasta
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes
  • 3 cloves garlic, minced
  • 1 cup spinach
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Cook the penne pasta according to the package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat a drizzle of olive oil over medium heat. Season the chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until golden brown and fully cooked. Remove from the skillet and let it rest.
  3. In the same skillet, add minced garlic and sun-dried tomatoes, sautéing for 1-2 minutes until fragrant and golden.
  4. Pour in the chicken broth and heavy cream. Stir to combine and simmer for 2-3 minutes to allow the flavors to meld.
  5. Stir in the fresh spinach and grated Parmesan cheese until the cheese melts and the spinach wilts into the sauce.
  6. Slice the rested chicken and return it to the skillet, adding the drained pasta. Toss to coat everything evenly in the creamy sauce.
  7. Serve hot, garnished with additional Parmesan and fresh basil if desired.

Notes

For a thicker sauce, let it simmer longer or add a cornstarch mixture. Don’t forget to taste and adjust seasoning.
