Description

A cozy Loaded Taco Pasta Bake that combines baked pasta with zesty Mexican flavors for a delicious meal perfect for any occasion.


Ingredients

  • 8 oz penne pasta
  • 1 lb ground beef
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 packet taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1/2 cup sour cream
  • Salt and pepper to taste
  • Chopped green onions and cilantro for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the penne pasta according to package instructions until al dente, then drain.
  3. In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain excess fat.
  4. Stir in the black beans, corn, taco seasoning, and salsa. Cook for about 5 minutes until heated through and well combined.
  5. In a large mixing bowl, combine the cooked pasta, beef mixture, sour cream, and half of the cheese. Mix well until everything is evenly coated.
  6. Pour the mixture into a greased baking dish. Top with the remaining cheese for that delicious, gooey finish.
  7. Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly on top.
  8. Garnish with chopped green onions and cilantro before serving to add a touch of freshness.
