- 8 oz penne pasta
- 1 lb ground beef
- 1 can black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 1 packet taco seasoning
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1/2 cup sour cream
- Salt and pepper to taste
- Chopped green onions and cilantro for garnish
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the penne pasta according to package instructions until al dente, then drain.
- In a large skillet, cook the ground beef over medium heat until browned, breaking it up as it cooks. Drain excess fat.
- Stir in the black beans, corn, taco seasoning, and salsa. Cook for about 5 minutes until heated through and well combined.
- In a large mixing bowl, combine the cooked pasta, beef mixture, sour cream, and half of the cheese. Mix well until everything is evenly coated.
- Pour the mixture into a greased baking dish. Top with the remaining cheese for that delicious, gooey finish.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly on top.
- Garnish with chopped green onions and cilantro before serving to add a touch of freshness.
