- 2 lbs frozen hashbrowns
- 1 lb sausage (breakfast or Italian)
- 2 cups shredded cheese (cheddar or your choice)
- 1 can cream of chicken soup
- 1 cup sour cream
- 1 onion, diced

- Optional: green onions for garnish
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet over medium heat, brown the sausage until fully cooked. Add the diced onion and sauté until translucent—about 5 minutes.
- In a large mixing bowl, stir together the frozen hashbrowns, cooked sausage and onion, cream of chicken soup, sour cream, and half of the cheese until fully combined.
- Spread this hearty mixture evenly into a greased 9×13 inch baking dish.
- Sprinkle the remaining cheese on top, adding an irresistible cheesy crust.
- Bake in the preheated oven for 45–60 minutes, or until the casserole is bubbly and the top is golden brown.
- Allow it to rest for a few minutes before serving. Garnish with sliced green onions if desired for a fresh touch.
