Ingredients

  • 2 lbs frozen hashbrowns
  • 1 lb sausage (breakfast or Italian)
  • 2 cups shredded cheese (cheddar or your choice)
  • 1 can cream of chicken soup
  • 1 cup sour cream
  • 1 onion, diced
  • Salt and pepper to taste
  • Optional: green onions for garnish

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, brown the sausage until fully cooked. Add the diced onion and sauté until translucent—about 5 minutes.
  3. In a large mixing bowl, stir together the frozen hashbrowns, cooked sausage and onion, cream of chicken soup, sour cream, and half of the cheese until fully combined.
  4. Spread this hearty mixture evenly into a greased 9×13 inch baking dish.
  5. Sprinkle the remaining cheese on top, adding an irresistible cheesy crust.
  6. Bake in the preheated oven for 45–60 minutes, or until the casserole is bubbly and the top is golden brown.
  7. Allow it to rest for a few minutes before serving. Garnish with sliced green onions if desired for a fresh touch.
