- 1 lb ground beef
- 1 small onion, diced
- 1 cup breadcrumbs
- 1 egg
- 2 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1 cup ketchup
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together the ground beef, diced onion, breadcrumbs, egg, salt, and pepper until well combined.
- Press the beef mixture firmly into the bottom of a greased casserole dish.
- Spread the creamy mashed potatoes generously over the meat layer.
- Pour the ketchup evenly over the mashed potatoes, and sprinkle with shredded cheddar cheese.
- Bake for about 45 minutes, or until the meatloaf is fully cooked and the cheese is golden and bubbly.
- Let it cool slightly before slicing into squares and serving.
Notes
For a vegetarian twist, substitute ground beef with lentils or mushrooms.
