Description

A comforting casserole combining ground beef and creamy mashed potatoes topped with bubbling cheese.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 cup breadcrumbs
  • 1 egg
  • 2 cups mashed potatoes
  • 1 cup shredded cheddar cheese
  • 1 cup ketchup
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the ground beef, diced onion, breadcrumbs, egg, salt, and pepper until well combined.
  3. Press the beef mixture firmly into the bottom of a greased casserole dish.
  4. Spread the creamy mashed potatoes generously over the meat layer.
  5. Pour the ketchup evenly over the mashed potatoes, and sprinkle with shredded cheddar cheese.
  6. Bake for about 45 minutes, or until the meatloaf is fully cooked and the cheese is golden and bubbly.
  7. Let it cool slightly before slicing into squares and serving.

Notes

For a vegetarian twist, substitute ground beef with lentils or mushrooms.
