- 1 pound chicken breasts, pounded to an even thickness
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- Lime zest from 1 lime
- 1 teaspoon chili powder
- 1 teaspoon brown sugar
- 3/4 teaspoon salt
- 1/2 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/4 to 1/2 teaspoon chipotle chili powder (optional)
- 1/4 teaspoon pepper
- 2 medium avocados, chopped
- 1 cup cherry tomatoes, quartered OR 2 Roma tomatoes, chopped
- Fresh corn from 1 ear of sweet corn
- 1/3 cup finely chopped red onion
- 1/2 red bell pepper, chopped
- 1 jalapeno pepper, diced
- 2 tablespoons finely chopped cilantro
- 1 garlic clove, minced
- 1/4 teaspoon ground cumin
- 1/4 teaspoon salt
- 1/8 teaspoon pepper (or more to taste)
Instructions
- In a small bowl, mix together the ingredients for the Fiesta Lime Rub: olive oil, lime juice, lime zest, chili powder, brown sugar, salt, cumin, smoked paprika, onion powder, garlic powder, chipotle chili powder (if using), and pepper. Rub this mixture evenly over the chicken breasts, allowing it to marinate at room temperature for 30 minutes or refrigerate for up to 8 hours.
- Heat an indoor grill pan or skillet over medium-high heat. Add the marinated chicken and cook for 3-5 minutes until browned. Flip the chicken, cover, and reduce the heat to medium, cooking for an additional 5-7 minutes until thoroughly cooked.
- Alternatively, preheat your grill to medium heat and grill the chicken breasts for 5-7 minutes on each side until the internal temperature reaches 165°F.
- Once cooked, let the chicken rest for about 5 minutes before slicing.
- In a large bowl, mix all salsa ingredients except chopped avocados and chill for 30 minutes to 24 hours. Just before serving, gently fold in the avocados and adjust seasoning to taste.
Notes
Adjust salsa seasoning with more lime juice, salt, or pepper as needed for perfect balance.
