- 3 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup unsalted butter, very cold and cubed
- 1 large egg
- 1 large egg yolk
- 1 cup packed light or dark brown sugar
- 2 teaspoons pure vanilla extract
- 4 cups chopped strawberries
- 1/3 cup granulated sugar
- 1 and 1/2 tablespoons cornstarch
- 1 teaspoon lemon zest
- 1 cup confectioners’ sugar, sifted
- 2 tablespoons fresh lemon juice
Instructions
- Preheat oven to 350°F (177°C). Line a 9×13-inch baking pan with parchment paper.
- Whisk together flour, baking powder, and salt. Cut in butter until the mixture resembles pea-sized crumbles.
- Whisk egg, egg yolk, brown sugar, and vanilla in a small bowl. Pour over the flour mixture and mix until crumbly.
- Press 4 cups of the mixture into the bottom of the prepared pan to form a crust.
- Mix strawberries, granulated sugar, cornstarch, and lemon zest in another bowl. Spoon over the crust.
- Crumble the remaining mixture over the strawberries.
- Bake for 45-50 minutes until golden brown and filling is bubbling.
- Allow to cool, then drizzle with a glaze made from confectioners’ sugar and lemon juice.
- Cut into squares and enjoy!
Notes
For best results, keep ingredients cold and watch baking times carefully. Chill bars before cutting for cleaner edges.
