Instructions
- Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (2-3 minutes).
- Mix in the lemon zest, lemon juice, and salt until well combined.
- Gradually add the flour, stirring until a soft dough forms.
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Roll the dough into 1-inch balls and place them on the baking sheet about 2 inches apart.
- Bake for 12-15 minutes, until edges are slightly golden; centers should remain soft.
- Cool slightly, then roll cookies in powdered sugar. For a stunning finish, coat again after cooling completely.
Notes
For best results, chill the dough for 30 minutes before baking and ensure to cream the butter and sugar adequately.
