Description

Ingredients

  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar (for the dough)
  • 1/4 cup granulated sugar
  • Zest of 1 large lemon
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon salt
  • Additional powdered sugar for coating

Instructions

  1. Cream together the softened butter and granulated sugar in a large mixing bowl until light and fluffy (2-3 minutes).
  2. Mix in the lemon zest, lemon juice, and salt until well combined.
  3. Gradually add the flour, stirring until a soft dough forms.
  4. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  5. Roll the dough into 1-inch balls and place them on the baking sheet about 2 inches apart.
  6. Bake for 12-15 minutes, until edges are slightly golden; centers should remain soft.
  7. Cool slightly, then roll cookies in powdered sugar. For a stunning finish, coat again after cooling completely.

For best results, chill the dough for 30 minutes before baking and ensure to cream the butter and sugar adequately.
