Ingredients

  • 46 bone-in, skin-on chicken thighs
  • Juice of 2 fresh lemons
  • Zest of 1 lemon
  • 4 garlic cloves, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme or oregano
  • Salt to taste (approximately 1 teaspoon)
  • Freshly ground black pepper to taste (approximately ½ teaspoon)
  • ½ cup chicken broth

Instructions

  1. Rinse the chicken thighs under cold water and pat them dry with paper towels.
  2. In a small mixing bowl, whisk together the fresh lemon juice, lemon zest, minced garlic, olive oil, dried thyme or oregano, salt, and pepper.
  3. Arrange the chicken thighs in the crockpot and pour the lemon-garlic marinade evenly over the chicken.
