- 4–6 bone-in, skin-on chicken thighs
- Juice of 2 fresh lemons
- Zest of 1 lemon
- 4 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme or oregano
- Salt to taste (approximately 1 teaspoon)
- Freshly ground black pepper to taste (approximately ½ teaspoon)
- ½ cup chicken broth
Instructions
- Rinse the chicken thighs under cold water and pat them dry with paper towels.
- In a small mixing bowl, whisk together the fresh lemon juice, lemon zest, minced garlic, olive oil, dried thyme or oregano, salt, and pepper.
- Arrange the chicken thighs in the crockpot and pour the lemon-garlic marinade evenly over the chicken.
- Add the chicken broth and gently stir to coat the chicken.
- Cover the crockpot and cook on low for 4 to 6 hours or on high for 2 to 3 hours.
- Transfer the chicken to a baking sheet and broil on high for 3 to 5 minutes for a golden finish.
