Description

A zesty and comforting dish combining bright citrus flavors and savory garlic with tender chicken and pasta, perfect for a weeknight meal or special occasions.


Ingredients

  • 2 chicken breasts
  • 200g pasta (fettuccine or spaghetti)
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 lemon (zested and juiced)
  • Salt and pepper to taste
  • Fresh parsley for garnish
  • Parmesan cheese (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, melt butter over medium heat.
  3. Add minced garlic and sauté until fragrant, about 1 minute.
  4. Season chicken breasts with salt and pepper, then add them to the skillet. Cook until golden and cooked through, about 5-7 minutes per side. Remove from skillet and slice.
  5. In the same skillet, add lemon juice and zest, stirring to combine.
  6. Add cooked pasta and sliced chicken to the skillet, tossing to coat in the sauce.
  7. Serve garnished with fresh parsley and Parmesan cheese if desired.

Notes

For a lighter version, substitute olive oil for butter. This dish can easily be reheated and enjoyed as leftovers.
