Instructions
- Dice the chicken into bite-sized pieces.
- In a large skillet, heat olive oil over medium heat. Add the chicken pieces, seasoning with salt and pepper. Cook for 6-7 minutes until golden brown.
- Stir in minced garlic and dried oregano, cooking for about a minute until fragrant.
- Add the orzo to the skillet, coating well in the juices from the chicken.
- Pour in the chicken broth and lemon juice, bring to a gentle simmer. Cover and cook for 10-12 minutes until the orzo is tender.
- Remove from heat and stir in lemon zest before serving warm, garnished as desired.
