- 2 carrots, chopped

- 6 cups low-sodium chicken broth
- 1 bay leaf
- 3 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tsp Italian seasoning
- 3/4 cup orzo pasta
- 2 cups shredded rotisserie chicken
- 1/4 cup fresh flat-leaf parsley, chopped

- grated Parmesan or Romano cheese (optional)
Instructions
- In a large pot over medium heat, warm the olive oil and butter until melted.
- Add the chopped carrots, celery, and onion to the pot, and sauté for about 5 minutes until softened.
- Stir in the minced garlic and cook for an additional 30 seconds.
- Sprinkle the flour over the vegetables, stirring until blended.
- Gradually pour in the chicken broth while stirring, then add the bay leaf, lemon juice, lemon zest, salt, and Italian seasoning.
- Bring to a gentle boil, then add the orzo and simmer for about 10 minutes, until tender.
- Mix in the shredded chicken and heat through, adjusting seasoning as needed.
- Fold in the chopped parsley before serving.
- Ladle into bowls and top with cheese if desired, and serve warm.
