Ingredients

  • 2 carrots, chopped
  • 2 stalks celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 bay leaf
  • 3 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tsp Italian seasoning
  • 3/4 cup orzo pasta
  • 2 cups shredded rotisserie chicken
  • 1/4 cup fresh flat-leaf parsley, chopped
  • to taste salt and black pepper
  • grated Parmesan or Romano cheese (optional)

Instructions

  1. In a large pot over medium heat, warm the olive oil and butter until melted.
  2. Add the chopped carrots, celery, and onion to the pot, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and cook for an additional 30 seconds.
  4. Sprinkle the flour over the vegetables, stirring until blended.
  5. Gradually pour in the chicken broth while stirring, then add the bay leaf, lemon juice, lemon zest, salt, and Italian seasoning.
  6. Bring to a gentle boil, then add the orzo and simmer for about 10 minutes, until tender.
  7. Mix in the shredded chicken and heat through, adjusting seasoning as needed.
  8. Fold in the chopped parsley before serving.
  9. Ladle into bowls and top with cheese if desired, and serve warm.
