Description

Ingredients

  • 1 and 1/4 cups granulated sugar
  • 1/2 cup packed light brown sugar
  • 6 tablespoons vegetable oil
  • 4 large eggs, at room temperature
  • 1 tablespoon pure vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk, at room temperature
  • 2 tablespoons lemon zest
  • 1/2 cup lemon juice, at room temperature
  • 1 and 1/2 cups fresh blueberries
  • 1 tablespoon all-purpose flour (for blueberries)
  • 8 ounces full-fat cream cheese, softened to room temperature
  • 1/2 cup unsalted butter, softened to room temperature (for frosting)
  • 3 and 1/2 cups confectioners’ sugar
  • 1 tablespoon heavy cream
  • 1 teaspoon pure vanilla extract (for frosting)

Instructions

  1. Preheat oven to 350°F (177°C). Grease three 8-inch round cake pans and line with parchment paper.
  2. Beat the butter until smooth, then add granulated sugar and brown sugar until combined. Add oil, eggs, and vanilla; mix until smooth.
  3. Mix flour, baking powder, baking soda, and salt in a separate bowl. Gradually add dry ingredients to wet ingredients, alternating with buttermilk, lemon zest, and lemon juice.
  4. Toss blueberries with flour and gently fold into the batter.
  5. Divide batter evenly among the prepared pans and bake for 22-26 minutes or until a toothpick comes out clean. Allow to cool completely.
  6. Beat cream cheese and butter until smooth for the frosting, then add confectioners’ sugar, heavy cream, vanilla extract, and salt; mix until fluffy.
  7. Level the cooled cakes, frost between layers and on top. Decorate with additional blueberries if desired.
  8. Chill for 45 minutes before slicing. Enjoy!
