- 1 cup unsalted butter, melted
- 1/2 cup granulated sugar
- 2 teaspoons pure vanilla extract
- 1/2 teaspoon salt
- 2 cups + 2 tablespoons all-purpose flour
- 2 cups granulated sugar
- 6 tablespoons all-purpose flour
- 6 large eggs
- 1 cup lemon juice (about 4 lemons)
- Optional: confectioners’ sugar for dusting
Instructions
- Preheat the oven to 325°F (163°C) and line a 9×13-inch glass baking pan with parchment paper.
- Mix the melted butter, 1/2 cup sugar, vanilla extract, and salt in a medium bowl. Add 2 cups + 2 tablespoons flour and stir until combined. Press the mixture evenly into the bottom of the pan and bake for 20-22 minutes until lightly browned.
- Sift together 2 cups sugar and 6 tablespoons flour in a large bowl. Whisk in the eggs and lemon juice until fully combined.
- Pour the lemon filling over the warm crust and bake for 22-26 minutes until the center is set. Remove and allow to cool at room temperature for about 2 hours, then refrigerate for 1-2 hours before serving.
- Dust with confectioners’ sugar, cut into squares, and enjoy.
Notes
For best results, use fresh lemon juice and keep the filling slightly jiggly when baking.
