This legendary La Scala Chopped Salad is inspired by the famous Beverly Hills restaurant. It’s fresh, crunchy, tangy, and always a hit. A celebrity favorite!
Ingredients
**Salad:**
– 1 head iceberg lettuce, rinsed and finely chopped
– 1/4 lb Italian salami, julienned
– 1 cup shredded mozzarella cheese
– 1 (15.5 oz) can garbanzo beans, rinsed and well-drained
**Dressing:**
– 1/3 cup extra-virgin olive oil
– 1/4 cup red wine vinegar
– 2 tsp Dijon mustard
– 1/2 tsp salt and black pepper (to taste)
– 1/4 cup grated Pecorino Romano or Parmesan cheese (plus more for serving)
Instructions
1. **Make the Vinaigrette:** In a large salad bowl, whisk together olive oil, red wine vinegar, Dijon mustard, salt, and black pepper until well blended.
2. **Assemble the Salad:** Add the chopped lettuce, salami, shredded mozzarella, and garbanzo beans to the bowl.
3. **Toss and Finish:** Toss everything together until evenly coated in the vinaigrette. Top with extra Pecorino and adjust salt and pepper to taste. Serve immediately.
