Ingredients

  • 4 cups beef broth
  • 8 ounces noodles (egg noodles or rice noodles)
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 1 onion, sliced
  • 2 carrots, sliced
  • 1 bell pepper, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. In a slow cooker, combine the beef, broth, soy sauce, gochujang, sliced onion, carrots, bell pepper, minced garlic, grated ginger, sesame oil, and a sprinkle of salt and pepper. Stir well to blend all flavors together.
  2. Cover the slow cooker and set it to cook on low for 6-8 hours or until the beef is fork-tender, allowing the flavors to meld beautifully.
  3. About 30 minutes before you plan to serve, cook the noodles according to package instructions until they are just tender. Drain them and gently fold them into the slow cooker, allowing them to soak up the aromatic broth.
  4. Serve the dish hot, garnished with chopped green onions for a colorful, fresh finish.

Notes

For added flavor, consider searing the beef before adding to the slow cooker. Adjust spices to your personal taste.
