Description

A heartwarming Thai coconut curry soup blended with aromatic spices for a comforting meal.


Ingredients

  • 1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 1 tablespoon red curry paste
  • 1/2 tablespoon yellow curry powder
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 can (13.5 oz) coconut milk
  • 2 cups chicken broth
  • 2 tablespoons fish sauce
  • 2 teaspoons soy sauce
  • 1 teaspoon palm sugar (or brown sugar)
  • 8 oz (225g) egg noodles
  • 1 lime, juiced
  • Salt and pepper to taste
  • 1/2 cup cilantro leaves, chopped (garnish)
  • 1/2 cup red onion, thinly sliced (garnish)
  • 1/2 cup pickled mustard greens (optional, garnish)
  • Fried shallots or crispy noodles (garnish)
  • Lime wedges (garnish)

Instructions

  1. Heat the oil in a large pot over medium heat. Add the red curry paste and sauté for about 1 minute until fragrant.
  2. Stir in the yellow curry powder, grated ginger, and minced garlic, sautéing for an additional minute.
  3. Toss in the chicken pieces, cooking until they’re no longer pink, about 5 minutes.
  4. Pour in the coconut milk and chicken broth, stirring well.
  5. Add the fish sauce, soy sauce, and palm sugar, stirring until the sugar dissolves.
  6. Let the soup simmer for about 20 minutes.
  7. While the soup simmers, cook the egg noodles according to the package instructions. Drain and set aside.
  8. After simmering, taste the soup and adjust with salt, pepper, or lime juice as needed.
  9. To serve, place cooked egg noodles in each bowl and ladle the soup over the noodles.
  10. Garnish each bowl with cilantro, sliced red onion, pickled mustard greens, crispy shallots or noodles, and lime wedges.

Notes

For maximum flavor, allow the soup to simmer longer and serve immediately for the best texture.
