Ingredients

- 1 and 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1/2 teaspoon almond extract
- 1/2 teaspoon pure vanilla extract
- 1 bag jelly beans
Instructions
- Whisk the flour, baking powder, and salt together in a medium bowl. Set aside.
- Beat the butter and sugar together until creamed.
- Add the egg, almond extract, and vanilla extract and beat until combined.
- Add the dry ingredients to the wet ingredients and mix until combined.
- Scoop dough and roll into balls; cover and chill for 1-2 hours.
- Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
- Place dough balls on baking sheets and bake for 10-12 minutes, until lightly browned.
- Remove from the oven; press jelly beans into the centers of warm cookies.
- Cool on a wire rack.
Notes
Chill the dough to prevent excessive spreading and maintain structure. Store baked cookies in an airtight container for up to 4 days.
