Description
Light, brothy, and full of flavor – this hibachi-style Japanese clear soup is just what your soul needs. 🍜 Cozy up with a bowl and feel the calm!
Ingredients
- 2 teaspoons sesame oil (or peanut oil)
- 8 cups chicken broth
- 4 cups beef broth
- 4 cups water
- 1 large sweet onion, peeled and cut into wedges
- 6 cloves garlic, peeled and smashed
- 2 large carrots, cut into chunks
- 2 inch piece fresh ginger, sliced
- 4 whole scallions, chopped
- 10 button mushrooms, sliced thin
- Salt, to taste
Instructions
1. In a large 8-quart stockpot over medium-high heat, add the sesame oil.
2. Add onion, garlic, carrots, and ginger. Sear until nicely caramelized — avoid burning the garlic!
3. Pour in chicken broth, beef broth, and water. Bring to a boil.
4. Reduce heat to a low boil and let simmer for at least 1 hour.
5. Use a skimmer to remove the solids, leaving behind a beautiful clear broth.
6. Season with salt to taste.
7. To serve: Ladle hot broth into bowls. Top with fresh sliced mushrooms and chopped scallions.
Notes
This soup tastes even better the next day.
Keeps well in the fridge for up to 4 days.
Add soy sauce to taste for deeper umami flavor.
