Description

Ingredients

  • 1 1/2 lbs ground turkey breast
  • 1 large onion, chopped
  • 3 cloves garlic, finely minced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 1/2 cups carrots, sliced
  • 1 1/2 cups celery, sliced
  • 1 can diced tomatoes (28 oz, not drained)
  • 3 cups beef broth
  • 4 tbsp tomato paste
  • 1 tbsp fresh basil (or 1 tsp dried)
  • 1 tbsp fresh oregano (or 1 tsp dried)
  • 1 tbsp fresh thyme (or 1 tsp dried)
  • 1/2 tsp chili pepper flakes
  • 1/4 cup fresh parsley

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add ground turkey, onions, garlic, salt, and pepper; cook until the turkey is browned, about 5-7 minutes.
  2. Transfer the sautéed turkey to a Dutch oven or large pot. In the same skillet, add carrots and celery, sautéing until slightly tender, about 3-4 minutes.
  3. Pour the diced tomatoes into the skillet to deglaze, scraping any flavorful brown bits from the bottom.
  4. Add the beef broth, tomato paste, and all herbs except parsley. Bring the mixture to a gentle boil.
  5. Transfer everything to the Dutch oven and mix well. Lower the heat to a simmer and let it cook for 30-40 minutes, allowing the flavors to meld beautifully.
  6. Stir in the fresh parsley during the last 5-10 minutes of cooking for a burst of color and flavor.

Notes

Freeze portions for up to 3 months for an easy meal later. Adjust seasonings as needed at the end of cooking.
