- 1 1/2 lbs ground turkey breast
- 1 large onion, chopped
- 3 cloves garlic, finely minced
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 1/2 cups carrots, sliced
- 1 1/2 cups celery, sliced
- 1 can diced tomatoes (28 oz, not drained)
- 3 cups beef broth
- 4 tbsp tomato paste
- 1 tbsp fresh basil (or 1 tsp dried)
- 1 tbsp fresh oregano (or 1 tsp dried)
- 1 tbsp fresh thyme (or 1 tsp dried)
- 1/2 tsp chili pepper flakes
- 1/4 cup fresh parsley
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground turkey, onions, garlic, salt, and pepper; cook until the turkey is browned, about 5-7 minutes.
- Transfer the sautéed turkey to a Dutch oven or large pot. In the same skillet, add carrots and celery, sautéing until slightly tender, about 3-4 minutes.
- Pour the diced tomatoes into the skillet to deglaze, scraping any flavorful brown bits from the bottom.
- Add the beef broth, tomato paste, and all herbs except parsley. Bring the mixture to a gentle boil.
- Transfer everything to the Dutch oven and mix well. Lower the heat to a simmer and let it cook for 30-40 minutes, allowing the flavors to meld beautifully.
- Stir in the fresh parsley during the last 5-10 minutes of cooking for a burst of color and flavor.
Notes
Freeze portions for up to 3 months for an easy meal later. Adjust seasonings as needed at the end of cooking.
